Zesty Lemon Bliss Balls

I had a hankering for something lemony = Here is Lunchbox idea #4. It was also a great opportunity to use my beautiful essential oils in my cooking. Essential Oils are distilled from plants and have the characteristic aromas and chemical components of the fruit skins, roots, leaves, stems, flowers, or bark. The naturally occurring essential oils in plants actually help the plant with infection and humidity control, wound healing, and repelling insects or animals. These same essential oils are concentrated in the process and are therapeutic for us. Among many other benefits, lemon essential oils stimulate the immune system, alleviate pain, and promote weight loss. I am enjoying experimenting with the amazing flavours of Doterra Essential Oils.


We all need some great healthy snacks on hand for those moments we need a quick pick me up or to send in the lunchbox. These Zesty Lemon Bliss Balls are a wonderfully filling and zingy, sweet addition to your fridge or pantry.


Dairy free, gluten free

Makes 20 balls


Ingredients:

1 cup almond meal

1 cup cashews

1 cup coconut flour

1 tsp vanilla essence

zest of 2 lemons

Juice of 2 lemons

3 Tbs Honey

20 drops Doterra Lemon Essential Oil

10 medjool dates

1/4 cup desiccated coconut to roll balls in


Method:

1. Place all ingredients into a high powered blender and blitz until well blended.

2. Scoop 1/4 cup of the mixture and press and roll them down into balls between your palms.

3. Roll the bliss balls in the desiccated coconut. Can be stored in the fridge, pantry or freezer.
