Vegan Spaghetti Bolognese

This dish is a salute to the homemade fav of many a household. It's hearty yet simple. When you are hankering for some flavours of home, try this spaghetti for a flavourful burst of plant-based goodness! This is a great dish for batch cooking and freezing!


Vegan, Dairy-free

Serves 6


Ingredients:

1 zucchini

1 carrot

1 onion

2 tsp olive oil

2 garlic cloves

1 Tbsp Massels chicken-style stock powder

1 tsp dried oregano

1 tsp dried basil

1 cup of dry TVP (Textured Vegetable Protein)

1 Tbsp Massels beef-style stock powder

1 400g tin crushed tomatoes

690g passata

1 Tbsp tomato paste

450g wholemeal pasta

Nutritional yeast flakes

garnish with parsley sprigs


Method:

1. Grate the zucchini and carrot (squeeze out excess juice from the zucchini). Set these vegetables to the side.

2. Dice the onion and crush the garlic.

3. Heat the olive oil in a large frypan. Add the carrot, zucchini, onion and garlic to the pan and fry on a med high heat, stirring regularly, until the vegetables are soft (10 mins). Add the herbs and sprinkle the chicken-style stock powder and cook for 2 mins and set aside.

3. Prepare the wholemeal pasta according to the packet instructions.

4. In a separate small bowl, place in the TVP and beef-style stock powder. Boil 1 cup of water in a kettle and pour over the TVP and sit for 5 minutes.

5. Then stir the pasta, TVP, tomatoes, passata and tomato paste through the vegetables.

6. Cook over stovetop until heated through.

7. Serve over (or stir through) the pasta with a sprinkle of nutritional yeast flakes on top and garnish with parsley before serving. Enjoy!


Thermomix Method:

1. Add onion, quartered, garlic, carrots and zucchini, cut into thirds to bowl and chop on 4 seconds, speed 5.

3. Scrape sides, add olive oil and saute for 5 minutes/ 120C degrees/ speed 2.

6. Cook 10 minutes/ 100 degrees/ speed 1.

3. Meanwhile, prepare the wholemeal pasta according to the packet instructions.

4. In a separate small bowl, place in the TVP and beef-style stock powder. Boil 1 cup of water in a kettle and pour over the TVP and sit for 5 minutes.

5. Then add the herbs, chicken-style stock powder, pasta, cooked TVP, tomatoes, passata and tomato paste to the Thermomix bowl. Cook 10 minutes/ 100 degrees/ reverse speed 1

6. Serve over (or stir through) the pasta with a sprinkle of nutritional yeast flakes on top and garnish with parsley before serving. Enjoy!
