Pesto Pasta Salad

Need to rev up your packed lunch game? Here is my lunchbox idea #2 - Pesto Pasta Salad. This is in constant rotation at our house. This is probably my kids' favourite lunch and such a simple prep. It is made with wholemeal pasta which has that rich brown colouring and extra fibre to keep you feeling full. This is a great dish that you can make in large enough quantities to last a few days.


Top this salad off with some fresh goodness too. Let me sprout on about sprouts for a minute. The process of sprouting increases the level of nutrients in the plant food. They also help with digestion, making the nutrients easier for your body to absorb. Broccoli sprouts in particular contain nutrients which have the ability to influence and protect every organ in the body. The anti inflammatory, cancer fighting properties are well documented. So choose to add them into your diet as often as you can. You can add them to a sourdough sandwich, or toss them into a salad. Add them to warm meals such as rice dishes, stir-fries or soups, or throw them into your smoothies. Trust me, your body will thank you.
