Peanut Butter Fudge, Fruit Salad and Soy Yoghurt

Here are some of the health benefits of peanut butter:

*It has monounsaturated fat which helps you lose weight and can prevent heart disease.

*Studies have shown 2 tablespoons a day lowered diabetes risk by a whopping 27%.

*It is rich in antioxidants, potassium and fibre.

*Peanuts have more protein than other nuts.

*Eating nuts makes you feel more satisfied.

Be careful of the brands which add in damaging fats and sugars. Look for brands with only one ingredient = peanuts. The magic ingredient within peanuts is genistein, which acts on the genes for obesity helping to turn them down and reduce your ability to store fat. Another way to have a quick snack with peanut butter - try putting some on a slice of apple. Enjoy!

Servings 30


1 cup peanut butter

2/3 cup coconut oil

1/2 cup honey


Melt and mix together in a small saucepan and pour into chocolate moulds. Cool and store in freezer. Eat straight from the freezer (If they last)

Enjoy with 1 cup of fruit salad and some soy yoghurt (175g).
