
Linseed Toast with Avocado, Tomato and Hummus

Don't you love it when a meal is quick to prepare but so very satisfying! I whipped this up for a Sunday lunch and my kids were drooling and asked for more. Only 7 ingredients on toast and less than 10 mins prep - winning!
Serves 1
Vegan, Dairy-Free
Ingredients:
2 slices of linseed or multigrain toast
3 Tbsp hummus
1/3 avocado, sliced
1 tomato, sliced
1/2 cucumber, sliced
3 slices of onion
2 Tbsp nutritional yeast flakes, 16g
1 Tbsp hemp seeds
Method:
1. Spread the hummus onto the toast
2. Arrange the slices of avocado, tomato, cucumber and onion on top
3. Sprinkle with the yeast flakes and hemp seeds. Enjoy!
