Ginger Nut Cookies

Makes 16

vegan, dairy-free, refined-sugar free


1 1/2 cups plain flour

2 cups wholemeal flour

1/2 cup coconut sugar (or rapadura sugar)

1 tsp cinnamon

1 Tbs ground ginger

A pinch salt

1 Tbsp hot water

1/2 tsp bicarb soda

1/2 cup maple syrup

125g rice bran oil (or coconut oil for an extra flavour)


Step 1

Preheat oven to 180C. Then to a large bowl add the flours, coconut sugar, cinnamon, ginger and salt. Mix thoroughly

Step 2

In a cup, add the hot water and mix in the bicarb soda. Next, mix in the maple syrup and oil, then add this mixture to the bowl with the dry ingredients. Stir to combine.

Step 3

Lastly, Form the dough into cookie shapes and lay on a lined baking tray. Press down with a fork on top. Bake for 15 minutes. Let cool then enjoy!
