Coconut Bacon


This is a sneaky way to add that tasty crunch to a salad without hurting any piggies. This coconut will have all the salty, sweet crispiness of bacon bits with only plant-based goodness.

Ingredients:

2 cups coconut flakes

2 Tbsp tamari

1 1/2 Tbsp maple syrup

1/2 tsp liquid smoke






Method:

Step 1 - Preheat oven to 180C. Mix the tamari, maple syrup and the liquid smoke together in a small bowl then pour it over the coconut flakes.

Step 2 - Lay the flakes out on a lined oven tray and bake for 6 minutes. Flip with a egg flip then bake for another 6-8 minutes. Stay close and watch like a hawk as the coconut can burn quickly at the end. Let the flakes completely cool and harden on the bench before placing in a sealed jar. Use them away on a salad or save in the cupboard for another day.
