Chickpea Cookie Dough




Who doesn’t like cookie dough! Here is Lunch box idea #3 for those who want to satisfy their sweet tooth and feed their gut good guys at the same time: Chickpea Cookie Dough. This recipe comes to us from @guthealthMD Dr B and it’s smashingly good. Dr B writes, ‘Chickpeas are packed with fiber that helps your bowels get moving’ and your microbiome grovin’. Hopefully you know by now that I’m OBSESSED with PREbiotic fiber and POSTbiotic short chain fatty acids. They’re game changers for both gut health and total body health. Chickpeas are also loaded with iron, protein and folate which help you feel full and energized’. Winning!


Vagan, Dairy Free, Gluten Free

Recipe: 1 can chickpeas, rinsed 1/4 cup cashew butter 2 1/2 Tbs maple syrup 1/2 tsp cinnamon 1 tsp vanilla

Cacao nibs (Dark choc chips)


Makes 4 serves


Method: 1. Add all ingredients to a high powered blender or food processor and blend until smooth.

2. Serve in a small bowls and sprinkle with dark chocolate chunks or cacao nibs.
