Here is a fun way to get more fruit in your day. It's my take on the traditional banana split. It is quick to whip up and delights the eyes with the pops of colour for a guilt free treat. The flavours certainly make this fruit filled bowl seem like a real treat.
vegan, dairy-free, gluten-free
3 strawberries, halved
2 squares of dark dairy-free chocolate
dollop of coconut yoghurt
*optional - sprinkle of nuts and cacao nibs
1. Slice the banana down the middle, lengthways and lay in a bowl side by side.
2. Toss the strawberries and blueberries on top and dollop the yoghurt over the top.
3. Heat a small amount of water -1 cm deep, in a small saucepan. Place the chocolate squares inside a small ramekin then sit into the heating water. The water should not touch the chocolate. Stir constantly until the chocolate is melted. Drizzle the chocolate over the fruit.
4. Sprinkle nuts on top if desired. Serve immediately!
