
Banana, Fig and Nut Bread

This Banana, Fig and Nut bread is a welcome and wholesome snack to have on hand. It can be sliced and kept in the freezer, ready put in a lunchbox or as an afternoon, guiltless treat.

Ingredients
1 cup mashed banana (2 bananas)
1 cup chopped dried figs (or chopped dried apricots)
1 cup chopped dates
4 Tbsp coconut oil
2 Tbsp chia seeds
1 1/3 cups boiling water
1/2 cup chopped walnuts
1/2 cup chopped pecans
1 cup SR flour
1/2 cup plain wholemeal flour
1/4 tsp baking pdr
1/2 tsp salt
Method:
Step 1 - Preheat oven to 180C
Step 2 - Mix together the banana, figs, dates coconut oil chia seeds and boiling water. Let the mixture sit for 10 minutes.
Step 3 - Mix together the nuts, flours, baking powder and salt. Then add the dry mix to the banana mixture 1 cup at a time, stirring to combine.
Step 4 - Pour the batter into a loaf tin and bake for 50-60 minutes. Remove from oven when you can pierce with a skewer or knife to the centre and bring it out clean and dry. Allow to the bread to cool on a wire rack before slicing and serving.
