Chia is such a versatile little seed. It is a superior source of omega-3, which is something most of us in the general population require more of. It is also great at plumping up when it is soaked. In this way, it is so useful in plant-based cooking. I use it a lot to bind recipes that would normally use egg for that. In this dessert, the chia seeds create their own little pudding consistency. And chia seeds are absolutely packed with fibre, which is super for your gut health. You know what also is packed with fibre? Passionfruit. So this pudding is certainly a little pop of sunshine that should go on 'repeat' in your meal planning.
NB. This can be frozen in little tubs for a great lunch box snack. Throw it in the lunchbox frozen and it will thaw out in time to enjoy it for lunch.
vegan, dairy-free, gluten free, nut-free
1/2 cup chia seeds
1 1/2 cups water
1 1/3 cup apple sauce
2/3 cup coconut milk
1/2 tsp cinnamon
Mix all the ingredients except the passionfruit together in a bowl and pour into 4 separate jars and refrigerate. Serve with cut passionfruit - enjoy!
