Acai and Granola Bowl

You can’t get much more refreshing than an açai bowl in Summer! The glossy deep purple of this superfood had grabbed the attention of every cool cat! Acai (Ah-sigh-ee) is a rainforest fruit much like a grape with a large seed or pit inside. They are collected from the Acai palm. Packed with nutrients, the acai boasts 19 amino acids and contain more antioxidants than other commonly eaten berries. They are high in healthy fats and gut loving fibre. This acai bowl is topped with homemade granola. It’s so easy to make and brings a smile.

Vegan, Dairy Free

Serves 2


2 acai packs (approx 200g)

2 frozen banana

1 cup frozen berries

1/4 cup almond milk

2 Kiwi Fruit

2 Lychee

2 Tbs pomegranate

2 Tbs shredded coconut

50g vanilla protein powder

6 Tbs Granola (see instructions below)

1/3 cup almond butter (or peanut butter)

1/4 cup maple syrup

*2 cups rolled GF oats

*1/4 cup almond slivers

*1/4 cup sunflower seeds

*1/8 cup pumpkin seeds

*2 Tbsp black chia seeds

*1/4 tsp cinnamon

*a pinch of pink salt


1. For the granola, mix the wet ingredients - 1/3 cup almond butter (or peanut butter) and 1/4 cup maple syrup.

2. In a separate bowl ix the next 8 *dry ingredients together - then stir the wet ingredients through.

3. Then press down onto a lined tray and bake at 180C. After 20 mins, turn the granola with a spatula leaving the chunks that we all love, and bake for another 10 mins. Voila! You’re done. Store in glass jar in fridge to keep it crunchy.

4. Next, mix the acai, frozen fruit, protein powder, and the almond milk together in a high powered blender.

5. Scoop into bowls and serve with the fresh fruit, granola and the coconut.
